Add the thyme and rosemary sprigs in.
Remove bay leaf and herb sprigs.
Remove roast and shred or cut into large pieces while removing fat then return to pot.

Add the carrots and potatoes into the dutch oven and allow the roast to bake for an additional 1 hour and 45 minutes for both the 3 and 4 pound.
Sprinkle 2 tablespoons of the flour over the entire roast until evenly coated.
Arrange a rack in the middle of the oven and heat to 3250f.

Sliver some garlic and then stab a few sliver sized holes in the roast so that you can insert the garlic slivers around the roast.
Remove the wrapping when ready to put in the oven.
If the roast is very lean you may want to drizzle a tablespoon of olive oil or two over the roast.

Sprinkle salt and pepper over the roast.
In a small bowl combine oil garlic rosemary thyme salt and pepper.
Remove from oven add carrots and potatoes to pot and season with salt and pepper.

Preheat oven to 375 degrees.
Add roast to pan and sear on all sides for about one minute per side.
The onions and potatoes take care of themselves when you cook the roast so you can pop the whole thing in the oven at once and turn something simple into something elegant finesse in its purest form.

Sprinkle onion soup mix over the roast and pour beef broth over the top and around the inside of the roasting pan.
Bake the roast for approximately 25 to 30 minutes for every pound of meat for a roast to be cooked to medium.
Return to oven and cook 1 1 12 hours longer until roast and veggies are tender.

Theres no secret to cooking a tender roast beef with potatoes and onions.
You just have to get a good sear on the meat using dry heat then tenderize it with moist heat.
In a heavy roasting pan or dutch oven over medium high heat melt butter.

Let the roast sit out for about an hour at room temperature but keep it in wrapping.
Using this amount of broth helps to keep the beef roast moist and tender.
Place a few sprigs of fresh thyme on top of the roast and pour in the beef broth.

You want the roast to be brown all over.
Cover the dutch oven with a lid and let sit in the oven for 1 hour and 15 minutes for a 3 pound roast and 2 hours and 15 minutes for a 4 pound roast.
It also soaks up into the veggies during the roasting for some fabulous flavour.

Season the roast with 1 12 teaspoons of the salt and the pepper.
Place the roast on a wire rack on a baking sheet.
Plenty of potatoes instead of roasting the potatoes and the beef in a roasting pan limiting how many potatoes can fit we place the roast over the potatoes on a perforated sheet of aluminum foil which also allows its juices to drip down onto them.
